Almond Coconut Granola

This granola is delicious and a healthy and cheaper alternative to cold cereal in a box. It really keeps you full for a long time. Some days I am not even hungry for lunch! It makes a lot, but it's worth making all at once since it bakes so long. I just made my second batch and we are all loving it!

Ingredients:

16 cups quick oats
4 cups coconut
1 cup cornmeal
1 cup sliced almonds
2 cups oil
2 cups water
1 1/2 cups honey
1/2 c. brown sugar
1 Tablespoon salt
1 Tablespoon vanilla
1 Tablespoon almond extract
Instructions:

1. Mix oats, coconut, cornmeal, and almonds in large bowl.

2. In another bowl or blender, mix remaining ingredients.

3. Combine all and stir well. Spread onto two greased baking sheets.

4. Bake at 200 degrees for 5-6 hours or until granola is dried and lightly browned. Stir once during baking.

5. Allow granola to cool, and store in an airtight container. Serve with raisins, dates, or chopped fresh fruit.
