O' Henry Bars

These are a decadent variation of rice crispy treats and are very addictive.  Enjoy!

In a large microwaveable bowl, add:

1 c. brown sugar
1 c. corn syrup
Microwave 2 minutes, until boiling.  Stir until smooth.  If sugar is not melted completely, microwave 1 more minute and stir until smooth.

Add:
1 c. creamy peanut butter and stir until smooth.

Add:
6 c. rice crispy cereal and stir until all cereal is coated.

Spread into greased 9x13 pan or jelly roll pan and pat down firmly.

In microwaveable bowl add:
1 c. chocolate chips (milk or semi-sweet)
1 c. butterscotch chips

Microwave for 45 seconds.  Stir and microwave again for 30 seconds.  Stir until smooth.  Spread over rice crispies.  Cool and cut into small bars.

Black Bottom Strawberry Pie

from my "Mexican" friend Julie A.

This is so delish, especially in the middle of strawberry season here in Lancaster County!

Ingredients:
1 pie shell, homemade, graham cracker or shortbread
3/4 c. hot fudge sauce or melted milk chocolate chips
1 8 oz. pkg. cream cheese, softened
1/4 c. sugar
1 tsp. vanilla
2 pts. fresh strawberries, rinsed and hulled
1/2-3/4 c. strawberry or raspberry jam, melted

Heat fudge sauce until pourable. Pour and spread evenly over bottom of crust. Place in fridge until cream cheese filling is ready. Beat cream cheese in bowl. Add sugar and vanilla and beat until smooth. Spread over chocolate layer. Place in fridge to chill slightly. Rinse and hull strawberries. Pat dry with paper towel. Place top side down into cream cheese layer until covered. Warm strawberry jam in microwave until pourable. Drizzle over strawberries. Chill several hours before serving.
