This is a combination of a couple of recipes that I've found for Dutch Babies. A Dutch Baby is a large, puffy "pancake" baked in the oven, preferably in a cast iron pan. If you don't have a cast iron pan, you can use a large, oven-proof frying pan or a large casserole dish.
Preheat your oven to 425 degrees.
Ingredients for a 9" pan:
1/2 stick of butter
4 eggs
1 c milk
1 c flour
1 tbs. sugar
1 tsp. vanilla
1/2 tsp. cinnamon
Put butter in pan in pre-heated oven. Mix eggs in blender, then pour in milk, and add flour, sugar, cinnamon and vanilla.
Remove pan from oven, pour batter in melted butter. Bake at 425 for 20-25 minutes, until golden brown. Humps and bumps are normal. Cut in wedges and serve directly from pan. Top with fresh fruit, jam, syrup, etc.
