Lentil Rice Casserole

OK, here's a healthy one for you after all that holiday food! Try this even if you don't normally like lentils! It is so tasty!

We like to put it in tortillas instead of ground beef, then add the toppings. We also like it as a dip for tortilla chips. For the dip, just add some sour cream and salsa and stir it up. We like it warm. I also like to make up baggies of the dry ingredients so it's easy to throw together on a busy day. I usually double it for our family so we have leftovers for lunch.

3 c veggie or chicken broth
3/4 c uncooked lentils
1/2 c uncooked brown rice
3/4 c chopped onion
1/2 tsp basil
1/2 tsp. salt
1/4 tsp each thyme, oregano and garlic powder (or 1 fresh garlic clove, minced)

Stir all together in a casserole dish. Bake, covered, for 1.5 hrs at 300 degrees.
