Vanilla Dipped Gingersnaps

2 cups sugar
1 1/2 cups vegetable oil
2 eggs
1/2 cup molasses
4 cup all purpose flour
4 tsp baking soda
1 tbs ground ginger
2 tsp ground cinnnamon
1 tsp salt

add'l sugar

2 pkgs (12 oz each) vanilla baking chips or Wilbur Coating wafers
1/4 cup crisco (solid)


In a mixing bowl, combine sugar and oil. Mix well. Add eggs, one at a time, beating well after each addition. Stir in molasses. Combine dry ingredients, gradually add to creamed mixture, and mix well. Shape into 3/4 inch balls and roll in sugar. Place 2 inches apart on greased baking sheets. Bake at 350for 10 minutes or until cookie springs back when touched lightly. Remove to wire racks to cool. Place chips with crisco in a small bowl and place in pan of water over low heat to melt. Dip the cookies in halfway, shake off excess. Place on waxed paper lined baking sheet and put in fridge/freezer to harden.
